For centuries, rice in Tamil Nadu was pounded by hand using large stone mortars — a labour-intensive process that partially removed the husk while retaining much of the bran layer. This "hand-pounded" rice is nutritionally richer, containing more fibre, B vitamins, and minerals.

Modern machine milling, however, uses rubber roller huskers and abrasive polishers to produce uniformly white, polished rice. While this dramatically improves shelf life and cooking consistency, it removes up to 60% of the grain's natural nutrients.
